Hand-picked olives from the Karoo, carefully rinsed, and pickled in salted water for 3 months, keeping chilled below 18°C. After 3 months this hand selection of olives is mixed with a blend of herbs, olive oil and vinegar, creating a vinaigrette to preserve the olive fruit until table ready. Enjoy as a snack, with a selection of cheeses, in salads, or when cooking with vegetables and meat products.
