Plain flour vs Cake Flour

Most of the recipes in the online cooking school calls for Plain flour, but no explanation is given as to what exactly is plain flour and whether it is the same as Cake Flour? I have never before seen Plain Flour in the supermarket before. Can I use cake flour?

It's all about the gluten. The protein content of the flour creates gluten... lower protein creates less gluten. Higher protein creates more gluten. Directly proportional.

Cake flour is the lowest protein flour-- creating little gluten; compared to bread flour which will create the most gluten.
