What recipe would you love to see on Yuppiechef? Anything you're burning to learn how to make?

Fruit jellies - like apple chilli jelly. I cant master the use of pectin.

petit fours as i always struggle with the cake as it is too soft and lamingtons - same problem, cake is too soft

Bouillabaisse. I can't find fresh: (I'm In Kloof KZN)

John Dory 2 x 600g whole john dory, (see note) filleted, halved lengthwise
2 x 700g whole flathead, (see note) filleted, cut into 6cm pieces
16 large green king prawns, peeled with tails intact, cleaned
4 scampi, halved lengthwise
400g black mussels, scrubbed, bearded
400g clams (vongole), soaked in cold water for 15 minutes

I would love to see a recipe for the Mozart Cake and different pastries and which tarts to make with them eg cream cheese pastry

I would love to see a recipe for a custard cake and something called a "Jodetert". I have no idea what it's called in English. My husband drools whenever he mentions the word "Jodetert" and I would love to surprise him with one. I understand that it's quite a lot of work as one has to bake many individual cake layers which is then filled with a type of custard.
