Best curry spice mix
When I make curry I tend to use whatever spices I have in the cupboard at the time, with no particular recipe. What do you put in your curry spice mix? Any secret ingredients or specific ratios that take your curry to new levels?

I also don't really have an exact recipe but I do love the added flavour that star anise, cassia sticks and curry leaves add. On the odd occasion I will also add some slightly toasted mustard seeds
I add a few lavender petals to my masala. That and roses can make a curry fragrant.
We always use the same base for all curries except fish curry- loads of coriander powder (this makes the curry!), chilli powder according to taste, tiny bit of garam masala, pinch of turmeric and salt to taste. Always comes out great! The trick is to also 'burn' your spices, which basically means adding them directly after you have added tomatoes to your fried onions-this brings out the aroma of the spices and also takes away the grainy texture of the coriander powder.
An Asian Supermarket Curry powder is a zest blend generally made with coriander, turmeric, cumin, ginger and chile peppers. Different flavors like mustard seed, curry leaf and cinnamon can likewise be utilized, and zestiness can be changed in accordance with taste. Have a go at adding curry powder to pureed tomatoes, broiled veggies, barbecued chicken or pork.
