Using coconut oil in coffee

Andrèa F. | 10 Mar 2015 in Recipes (Category closed) | 1 Response

Has anyone tried using coconut oil in coffee as a variation on bulletproof coffee?

I'm trying it as an alternative to milk in an effort to decrease my diary intake. It emulsifies and froths up really nicely, but it doesn't maintain its froth (and I'm blending it with a high speed stick blender) and eventually reduces to creamy tasting coffee with a slightly oily sheen to it. Is this normal? Should I be blending it for longer? What else can I add to my coconut oil coffee to experiment with flavour or consistency?

I also love coffee with coconut oil twist and adding cinnamon to boost the flavor.
