Ideal for de-boning chicken or ham, trimming fat and sinews. The tapered, pointed blade is a necessity for working closely around joints. The high-carbon steel is strong enough for tough ligaments, and the sharp blade makes removing fat easy.

This knife has been purposely ground extra thin for the ultimate cutting performance. Chopping through bones will damage the fine edge.
Although some Wüsthof products are dishwasher safe, we do not recommend that your knives and scissors be put in the dishwasher. Blades can knock together, damaging them, and if not washed soon after use, corrosive food particles can damage the blade. Rather wash your knives after each use with warm water and a little detergent, rinse carefully and dry with a towel.

I have had expensive boning knives in the past and the problem was keeping them sharp. Even the Wusthof sharpener wasn't up to the job and there are no professional knife sharpeners anywhere remotely close in my area.
