To make beautiful green tea, heat water to about 75-80°C, and pour over leaves. Steep for 1-2 minutes, depending on strength, and remove leaves from water. Reintroduce leaves to water for a second infusion - loose leaf teas can be infused many times, each time releasing new flavours. Discard when tea becomes bitter.
