Care instructions

- Prepare your frying pan by cleaning with very hot water, then dry it thoroughly
- Pour one centimeter of cooking oil into the pan, and wipe it around. Then heat it on the stove on a medium-high temperature for about 5 minutes
- Throw away the oil and wipe your pan with paper towels
- The more the pan is used, the better the performance; the darker it becomes the better it is for natural nonstick properties
Use:
- Heat a small amount of oil or fat in the frying pan, and once the pan is good and hot, seal the food about 45 seconds on each side before reducing the heat to complete cooking
- Do not leave the meals in the pan after cooking, as the residual heat will carry on cooking your food
Cleaning after use:
- Wash the frying pan with very hot water and a sponge, and wipe dry
- From time to time, purify the pan by heating up cooking salt over a high heat for about 1.5 minutes, then wipe with a kitchen paper. The salt helps to suppress the residues and the odours from previous cookings
- To store, wipe oil over the surface with a paper towel and put away in a dry place
- Do not leave your pan to soak. If food sticks to the pan, use a green sponge to scrub it off, and re-season the area
- Never put the pan in a dishwasher. The pan may rust if these conditions are not respected. Just scrub the pan with a hard brush to remove the rust, and season from scratch

Marvelous pan!

Having heard all manner of horror stories regarding the proper way to season carbon steel pans, I was somewhat apprehensive about this purchase. I needn't have worried! A hot wash to remove the inevitable manufacturing crud that sticks to the beeswax - while leaving a layer of wax behind - is all that is needed before seasoning. Then a good wipe of grape seed oil all over the inside of the pan before heating over a hot stove until the oil smokes and starts going a nice, deep brown. I repeated this process 3 times, allowing the oil to really burn into the surface. It's that layer of carbonation that you need to create the non-stick surface, so don't be shy about really going for a dark burn. After that, I heated the pan up, sizzled some butter, cracked an egg into it, and that puppy slid out of there like a dream. Read more

It's like a vegetable patch

The more you tend it, and kind of neglect it at the same time - the better it gets. I love it so much I also got the 32cm. They make beautiful frittatas, start on stove top and finish under the grill in the oven.
Don't scrub it with soap. Directly after use just add boiling water and scrub with a dish brush only. Dry it, give a super thin layer of flax seed oil - rub most of it dry with a paper towel, trust me the thinner the better. Switch on the heat and heat it on full blast until it stops smoking- you might want to have a fan around, at least until you've seasoned it. You'll notice it becomes dark - almost black - thats the seasoning. Do that for the first few times and especially use it to shallow fry potatoes or caramelise onions - the fat must really get into the pores of the iron - and it is still iron. This is not a pan for lazy users as you MUST clean it immediately after use, otherwise you run the risk of it rusting. Don't use it for any acidic foods that will dissolve your seasoning - tomatoes, wine, vinegar etc. This pan loves butter and fat, but you will never in your life taste an egg quite like this. It's heavenly. Obviously not for calorie counters. ;) Read more

Yes you can!!! I was looking for a decent pan, and all the reviews convinced me. I'm very impressed with my pan. It is a good size and the higher sides means you can get quite a bit in there. I wash it myself, only with hot water and a sponge. No sunlight liquid.
I would recommend this to anyone who enjoys cooking. And if you can lift it high enough it can double up as a damn good self defense weapon! ;) Read more

The De Buyer pan is a higher grade tool perfect for the amateur cook who dreams of whipping up dishes like a pro.
The initial seasoning process involves lots of heat, oil and blackening, but once burnt to a crisp it becomes an absolute joy to use. It takes a bit of getting used to the idea that this isn't a tool you want to be bringing near any form of soapy water, but once that mental shift has been made you'll be happy just pouring in some boiling water and giving it a fast swish with a sponge.
I can see me wanting a few more De Buyer products in my kitchen. They're so enjoyable to use I find myself looking for reasons to fry something.

I thought I'd try this pan out for a good couple weeks before writing a review.
I cook everyday, my husband and I are pescatarean (the only meat protein we have is fish). This pan is awesome, I love it so much, after using it more and more its starting to get nicely seasoned. It sears, sautés, grills and makes perfect pancakes. It's a bit heavy but every good pan is.
Be sure you take extra good care of it, never leave it in water or it will rust and always use what is in it right away because the pan stays HOT - it will keep cooking your food. Anyone who cooks will LOVE this pan and its a great value for a quality product. Read more

Now completely non-stick

This is without doubt the best pan I've ever had the pleasure to cook with. I washed it with a scouring sponge and hot soapy water, dried it off and then put a handful of salt crystals and enough olive oil to cover the bottom. Heated it till blue smoke. Allowed to cool a bit then rinsed it with cold water and dried with a paper towel. Oiled the surface and hung it. Next day cooked steak to perfection. Next day cooked bacon and fried eggs. No sticking. Secret is to NEVER use soap, only hot water to clean, finishing off with a smear of oil to store. Much better than the most expensive 'Non-Stick'. Read more

After a false start with the seasoning, I cleaned it completely and seasoned it again. It is a deep brown and quite non-stick already. It is great fun to cook in. The best tip I got to prevent food sticking, was to make sure the pan is hot before putting the food in it.
The pan is indeed quite heavy. My wrists are not strong (post-injury), so I limit the wrist action and grab the other side with a gloved hand if necessary. I am considering the 32cm - although it is heavier, it has a second handle with which to stabilise the pan more easily. Read more

This is probably the best thing I've ever bought for my kitchen. It may look aged and well-used after just a month but that's because it is! I seasoned it as directed, and I am amazed! Loving this pan.
After doing high heat cooking (like steak) I deglaze with hot water, the stubborn bits I get off with course salt and a sponge, and I wipe it down with as little oil as possible when storing.
Do some reading up on these pans so you know what maintenance is needed and what to expect - you won’t be disappointed.

Bought as a replacement for a cast iron skillet which was too heavy.
After seasoning, eggs and meat do not stick. First fish did, so did a second seasoning and was better.

I did quite a bit of research before I bought this pan. I have only used it twice but I am already thinking of buying another one in a different size. The handle is so sturdy and there is no way that it will become loose like so many other pans on the market. I used it on gas and it got super hot very quickly. I am following the instructions and am cleaning it with very hot water only; no chemicals. I cannot see why this pan will not last forever as the more you use it the more seasoned it will become. It reminds me of the woks that the Chinese use with that special lustre after a few uses. Read more

First impressions
Beautifully crafted, very well made, fairly heavy, but much lighter than a cast iron of the same or even smaller size.
Cleaning
After unpacking as instructed I gave it a quick wipe down in very hot water to remove most of the beeswax.
Seasoning
I heated 1mm of grape seed oil (it has a high flash point) until it started to smoke. Emptied the oil and wiped excess. I repeated twice.
Cooking
Then heated up some oil and watched the food slide around the pan. First some potatoes and then eggs. No sticking at all. Very impressed.
Clean with hot water and green sponge immediately after use. Dry and oil.
Since I have cooked fish twice and it works really well. Just remember to get the pan and oil hot enough before cooking.
Thoroughly recommended.

I've only used it a couple of weeks, so it's still seasoning, but I love it! So much so that I went and bought the deep one also - perfect for stir-frying and veg (it's basically like a small, steep-sided wok)
We've cooked everything from bacon and eggs and steak to tarte tatin in this thing and it's all come out amazing. The steel gets really hot and you get an excellent sear on your steak, it's just brilliant. NB: keep in mind that this is not a stainless steel pan, you have to treat it more like cast iron, but with a little bit of care, it will serve you beautifully. Read more

After I seasoned this pan, I found out that if I use butter to fry the egg, it is definitely an excellent non-stick pan, but when I use vegetable oil, it sticks. So I give myself a deep breath and give myself a break with the pan. Now I found the way to make it non-stick. Only found out this year that you should not use your non-stick pans on high heat, otherwise, it will lose its non-stick coating (as it did).
I got this carbon steel pan for searing and cooking steaks. So far, so good... just takes time to get used to the fact that you don't clean it up like non-stick pans. Note: the caring instructions are different, remember to read up on how to care for your new pan. Read more

Not easy to find a quality carbon steel pan in South Africa for some reason, so pleased I did some research and found this one.
Seasoned it with grape seed oil on my gas hob and it is an amazing pan, better than any non-stick pan I have ever used.

De Buyer, excellent quality carbon steel pan. Has beautifully even heat distribution and very good heat retention. Once properly seasoned this pan is extremely non-stick. You can easily do the fried egg test on this pan with confidence.
